Brian Malarkey has a specific knack for restaurant design and picking talent. Each of the restaurants in his franchise are beautiful with a touch of whimsy and fantasy and clearly his talent radar (duh… He and Chef K won The Taste on ABC last season) is in full working condition because his mixologists have got it DOWN! After an amazing time at dinner during Comic-Con at the Gaslamp location of Searsucker, which included incredible , we reached out to retrieve a recipe JUST FOR YOU to try on this ThirstyThursday!

Peter Rabbit – Searsucker Del Mar

This light, sophisticated, yet playful cocktail, combines Pimm’s 1, bruised basil and pressed lemon and is garnished with a crisp house picked baby carrot.

Cocktail-BadgeIngredients:

For the simple syrup:
3 cups sugar
3 cups water
Pinch salt

For the basil-lemon:
1 tablespoon fresh basil leaves
1 cup freshly squeezed lemon juice

Finishing touches:
2 ounces Pimm’s
Picked carrot
Fresh basil leaf

Preparation:
1. Make the simple syrup: In a pot on medium heat, whisk the ingredients until all the sugar is dissolved.  Let cool.
2. Make the basil-lemon: Combine the ingredients in a blender and blend on high for 1 minute.  Strain to remove any solids.
3. In a shaker, combine the Pimm’s with 1 ounce of basil-lemon and 1 ounce of simple syrup over ice. Shake and strain into a rocks glass with ice.  Garnish with a picked carrot and basil leaf.
