The weekend’s over, you got an extra hour of sleep and it’s time to get this Monday moving!
Here’s a great way to start your week; with a little protein-rich breakfast to give you the energy you need to power up for that morning meeting!
Ingredients:
Onions
Garlic
Carrots
Celery
Leftover weekend meat… Chicken, pork, steak. Doesn’t matter (though fish may not handle this so well).
Egg
Method:
Finely chop onions and garlic, saute on medium heat with your preferred oil. I like coconut oil. Cook about 5 minutes until onions are translucent.
Chop your carrots and celery and add to pan. Let cook an additional 5 minutes until carrots are just starting to soften because you still want that crunch.
Add light seasoning, as most likely you already seasoned your protein the first time around.
Add your chopped protein to heat thru. Put aside on your plate while you make your egg any way you like. It’s your morning.
Top your Hash and VOILA!
