Casa Noble Crystal Organic Tequila, fresh pressed lime, organic fig and rosemary jam
Mixing Instructions:
1 oz. Casa Noble Crystal
1 oz. Fresh lime juice
1 oz. Fig and rosemary jam**
Combine all ingredients in a Boston shaker. Add ice and shake vigorously for 30 seconds, strain into an old fashioned glass filled with fresh ice. 
Garnish with fig or rosemary sprig and serve.
**Fig and Rosemary Jam:
quarter 2 pints fresh black mission figs, and place them in a medium pot. Add 2 cups sugar and 1 finger length sprig of rosemary to the pot. Add a pinch of white pepper and 1 cup of water to the other ingredients. Place the pot over medium high heat for 30 minutes. Strain off the woody solids; passing the liquid and broken-down fruit through a medium grade sieve. Allow to cool before use.
Tasting notes:
This magenta cocktail is striking in color and taste. It is sweet savory and refreshing all at once. The driving acidity of the lime gives it structure. The rosemary and white pepper draw out the earth and spice notes in this well crafted tequila, and the soft round flavors of fig mimic and enhance the sweet fullness of the agave.
