Chef #paul mccabe… You have heard his name in many esteemed culinary circles and San Diego is just one of the fabulous locations he has honed his skills. With each turn of a corner you cannot help coming across news of Chef McCabe. He is involved with Cooks Confab and just recently was listed as one the 50 People to Watch in San Diego 2012 by San Diego Magazine.
Previously he shared his passion with patrons in Sedona, Kona & Beverly Hills. In the recent past, he was the magic behind Kitchen 1540 at the L’Auberge Del Mar but his newest adventures have brought him into the village of Rancho Santa Fe as the Executive Chef and partner at Delicias. A few changes came with Chef McCabe; his right-hand man, Sous Chef Steve Molina, a seasonal menu with a focus on locally grown offerings and a fire in his belly to stretch our culinary experience. He told us he does have a few surprises up his sleeve that we will all hear about over the coming months and we can’t wait.
I always like to push myself, grow and move forward. Usually if I am doing the same dish as a year ago, I’m really hard on myself. I don’t make change for the sake of change but for evolution. ~ Chef Paul McCabe
