Crunchy Curry Chicken Salad recipe

DIETS… Protein, slow carb, Perricone, Atkins, Macrobiotic, Gluton-free. There are just so many! So when lunchtime rolls around, it is so difficult to know what to reach for. School is back in session and moms across the country are strapped for time with their chauffeur duties and other household time constraints.

Here is a super simple quick meal for all of you who are on the go. Make ahead and leave in the fridge so you have easy options to avoid the temptations of the drive-thru.

  • 1 can chunky chicken
  • 1 celery stick
  • 1 carrot
  • 1 green onion
  • 3 tsp. parsley
  • palm full of pumpkin seeds
  • 2 tsp. mayo
  • 1 Tbsp. dijon mustard
  • 1/4 tsp. garlic powder
  • 1 tsp. turmeric
  • Salt & Pepper to taste
  • Alfalfa sprouts

Drain water from the chicken and add to a medium sized bowl. Chop celery, carrots, green onion and parsley. Add the chopped mix and pumpkin seeds to chicken. Stir in the mayo, mustard, garlic powder, turmeric, salt & pepper. Top with alfalfa.

Benefits of turmeric: Commonly used in Indian and Chinese foods, the warm, brightly colored, screaming yellow spice has been thought to be an anti-inflammatory and antioxidant. BONUS!
