SOUP! Winter’s Instant Elixir
When the weather turns cold and the chill in the air reminds you that you have a nose because it is FROZEN, you know it is time to start a pot of soup that can either take over a meal or simply settle on the stove all day at the ready for a bowl of instant warmth.
I had a hankering for something not to heavy and cream-based but rather something that could fill me up and give me a boost of bug-prevention! I decide on a pot filled with homemade meatballs, a lot of ginger, vegetables and garlic. I would have made my own stock too but I was anxious for some internal heat. My face was about to be frost bitten in this cold Southern California climate. **wink wink**

RECIPE:
Saute the following:
3 carrots chopped
2 stalks celery, chopped
1/2 onion, chopped
4 cloves garlic, chopped
2 inches of fresh ginger, chopped
1/2 tsp. olive oil
Meatballs: mix the following
1 lb. Ground beef or lamb
1/4 cup parmesan/reggiano cheese
1/4 cup panko bread crumbs
1 egg
Salt & pepper to taste
(Feel free to use additional spices you enjoy in these meatballs)
Once the vegetables are softened, add 8 cups beef broth and 1 bay leaf. Once it comes to a boil, add the meatballs. Simmer for 25 minutes. Serve.
**I had leftover rice so added a scoop to the soup. It was just the thing for a chilly day.
